Take any of the following fish in the title:
Get a sheet of tin foil about 4 inches longer then the fish.
Cut off the head or leave it on your choice, scale it, gut it, gill it, rinse it.
Butter the tin foil or use spray or margarine, spread a light coating of it over the tin foil.
Slice a few slits in the fishes flesh on both sides about a 1 1/2 inches apart.
Take an onion slice it in 1/8 inch slices.
Do the same with a Green/Red Bell Pepper .
Dice some Cilantro and Garlic about 1 table spoon of garlic.
Take a lemon and juice it. You will need a 1/8 to a 1/4 cup.
Now you want to layer the the tin foil first with a couple pieces of onion then some bell pepper.
Put a light amount of salt on the fish and some pepper.
Take the Garlic and Cilantro mix it together with butter or margarine.
Coat the fish with the butter/margarine mixture
Lay the fish upon the foil and layer the bell pepper and onion over the other side of the fish.
Now wrap the foil over the fish and seal it shut.
To cook it I prefer to grill it but you can also use the oven.
To grill it simple have your grill ready and place over the hot grill for 20 minutes 10 minute per side flipping it times in total.
Oven bake it for at 350 degrees for about 15 min. or 20 or to your liking.
The fish should be perfectly cooked in its own juices and marinaded to perfection with its butter onion garlic and such it's so damn good. If we ever get down to San Quintin or out on camping trip in Baja I'll share it with yall.
